Just like a smoothie, dressings like this creamy pesto are a GREAT way to maximise nutrients in + maximise taste!
I love to use different herbs 🌿 each time I make a pesto like basil, kale, parsley, spinach, coriander + dill. To make it nice + creamy, I use either cashews, pine nuts or hemp seeds + lightly toast them in the pan prior to blitzing them- toasting them helps to release the oils from the seeds/nuts + also enhances the flavour!
Also, Tahini is amazing to add a spoon full!
INGREDIENTS
- Handful of spinach
- 1/2 TSP of matcha
- 1 TBS Tahini
- 200ml Olive oil
- Dash of water
- Any of your chosen fresh herbs for flavour, Parsley, mint coriander etc
- 1/4 cup of Cashews, hemp seeds or pine nuts
- Juice 1/2 to 1 whole lemon
- Salt and Pepper
METHOD
I pop all ingredients in a bullet blender. Firstly pulse a few times until everything mixes, and then blitz until it becomes smooth!
Put in an airtight jar, and use within 5 days!
